Chef Martin Batis' vibrant Mediterranean menu features a unique marriage of Northern Italian and Southern French cuisine. A skilled fisherman himself, Chef Batis opts for locally-caught seafood and frequents San Diego County's many farmers markets for fresh, sustainable ingredients.
Located just steps from the Mistral kitchen is Chef Batis' greatest resource - the resort's 3,800-square-foot herb garden. Basil, artichokes, strawberries, rosemary, lavender, broccoli and thyme are just some of the more than 65 vegetables and herbs found on-site. As a savory reminder of dinner in Mistral, guests even take home freshly-baked herb-infused cookies to enjoy at home.
